In a large stew pot add two cups of vegetable stock, one diced onion, three large peeled and diced potatoes, two cloves of minced garlic, two tablespoons of butter, one frozen head of chopped lettuce, two teaspoons of seasoning salt, two teaspoons of ground black pepper, and one tablespoon of basil. Stir well, place lid on and simmer on medium-low heat until all vegetables are fork tender.

Puree the soup with a hand blender. Then add one can of cream of mushroom and one can of cream of celery soup. Stir well, and simmer the soup for another ten minutes. Serve and enjoy.

Use the dehydrated lettuce in place of croutons. The crunchiness tastes great sprinkled on top of the fresh salads.

To rehydrate frozen lettuce, place it in water for about thirty minutes.

You can also use lettuce as a substitute for spinach in numerous recipes. It can also be cooked mixed with other leafy greens such as collard greens, mustard, and turnip greens.
