Recipe of the Week: Chicken Thukpa Soup - Times of Oman

Ingredients 2 tbsp vegetable oil 1 kg chicken 1 medium-size onion, finely chopped ½ cup chopped spring onion 2 garlic cloves, minced 2 green chillies, finely chopped 1 tsp grated ginger 1 cup chicken broth Juice from 1 lemon Salt, to taste 1 tsp soy sauce 1 tsp honey ½ cup noodles, cooked according to the package directions ¾ cup frozen vegetables ( carrots , peas and corn )

Preparation In a saucepan over medium heat, heat the oil. Add the chicken and sauté for 10 minutes. Add the onion, spring onion, garlic, green chillies, and ginger.Cook, stirring, for 3-4 minutes. Pour in the broth and add the lemon juice, salt to taste, soy sauce, and honey. Stir well to combine. Reduce the heat to low and cover the saucepan .Cook the broth for about 15 minutes. Remove the chicken from the broth and shred it. Add the shredded chicken back to the broth along with the noodles and vegetables. Let it simmer for another 10 -12 minutes. Serve hot.
