How to Make Honey Balsamic-Glazed Carrots - Poosh

Remember when you were growing up and your parents told you to eat your carrots to help you see at night? Well, they were right. Packed with vitamin A, these orange-colored root vegetables do aid in eye health. 

To increase your carrot intake, we teamed with Nikki Baumel of My Sweet Belly to create a delicious honey balsamic-glazed recipe. “The most widely known benefit of carrots is that they are great for your eyes! That credit goes to the beta-carotene, which gives carrots their rich orange color and can help fight off damaging UV rays from the sun. You can think of these veggies as being somewhat of an internal sunscreen too,” Nikki shares.

2 bunches small/medium carrots 1 1/2 tablespoons extra virgin olive oil 2 teaspoons fresh chopped thyme 2 tablespoons balsamic vinegar 1 1/2 tablespoons honey  Salt and pepper 

1. Slice carrots lengthwise and toss with olive oil, salt, and pepper. 2. Bake at 425° F for 35-40 minutes. (*Until cooked tender enough to cut easily with a fork) 3. Toss with honey, balsamic, and thyme.  4. Enjoy!
